Easy Vegetarian Stew
2 tbsp oil
1 medium onion, diced
2 stalks celery, chopped
3 medium carrots, diced
200g baby potatos, cut into quarters
1 can (540ml) chickpeas or white beans
Roughly 2 and 1/2 (or more) cups of water
2 cups vegetable broth
1 can (240ml) no salt added corn
1 cup frozen edamame beans
1/2 tsp of poultry seasoning
1. Saute onion and celery in a large pot.
2. Add carrots and potatoes, and cover well with water and broth. Bring to a boil and simmer until veggies are soft (about 20 mins).
3. Add chickpeas, corn, edamame, and poultry seasoning.
4. Mix flour or cornstarch in a few tbsp of water and add to veggie mix. Cook until mixture thickens. Add more if still too thin.
Tip: For more protein, add shredded chicken or turkey. You can also roast the potatoes with seasoning prior to adding them to the stew for extra flavour!
